Banana cake with flowers

Extra wholesome! Banana cake with edible flowers.


What do you need:

 

  • 2 ripe bananas

  • Half a lemon

  • 3 eggs

  • 200g plain flour

  • 180g white sugar

  • 240 ml sunflower oil

  • 1 tsp salt

  • 1 tsp baking soda

  • 1.5 tsp self-raising flour

  • 1 punnet of edible flowers mix

Preheat the oven at 180 degrees. Mash the bananas and squeeze the lemon. Stir this well and leave it aside for a moment. Mix the plain flour, the self-raising flour, the salt and the baking soda together, shake it out through a sieve and leave this aside as well. Using a mixer with whisks, mix the eggs and the sugar and then add the mashed bananas and sieved plain flour. Finally, mix the sunflower oil through this. Distribute the batter among 12 cupcake moulds.

Put the moulds in the preheated oven for 20 minutes. Then leave them to cool and decorate with buttercream/whipped cream and the edible flowers. The pansies in particular are a very good match; pansies have a mildly sweet and cinnamon-like flavour, a delicious combination with the banana cakes!
