
Virgin Mojito popsicles

Sunny days call for something refreshing! These Virgin Mojito popsicles are our absolute favorite. With just a little effort and a bit of patience, you can make these delicious Mojito-flavored ice pops at home.
Ingredients:

250 ml lime-flavored tonic (or sparkling water)

4 limes

Passion fruit

100 g cane sugar (or honey)

100 ml water

15 g fresh mint
How to make them:
Start by making a simple syrup. Heat the sugar and water together in a small saucepan over low heat until the sugar has completely dissolved. Let it cool. Your simple syrup is ready! If you'd rather skip this step, you can simply add honey to taste instead.
Gently bruise the mint leaves to release their flavor. Mix together the lime juice, simple syrup, tonic, and mint leaves. Taste as you go and adjust if you prefer it a little sweeter or less tangy.
Pour the mixture into popsicle molds and add a few extra mint leaves and a slice of lime to each mold for decoration. Freeze for at least 4 hours until completely set.
Tip: This recipe is easy to customize! Try adding the pulp of a passion fruit, or mix in some mango or strawberries for a delicious twist.
